Our Thyme Tavern carries on Lewisburg’s made-from-scratch food tradition

LEWISBURG, W.Va.— At Our Thyme Tavern, the name says a lot. It’s a reference to the fresh herbs and ingredients that add flavor to the dishes, and it also speaks to the time invested in creating them. 

Owners Yarrow Levine and Ryan Walters owned The Burrito Bar in Fayetteville for 13 years before purchasing the former Livery Tavern in Lewisburg. 

The husband-and-wife team has infused their love of travel into a menu featuring slow-cooked, made-from-scratch recipes inspired by flavors from around the world, offering something for everyone.

They describe the food as “New American with international flavors.” 

“I wanted to signify that it’s a place with a lot of flavor — in terms of the name,” Levine said. “We use a bunch of fresh herbs for our salad dressings and sauces as well as to infuse desserts.”

Four varieties of thyme grow in the beds alongside the restaurant, and ingredients are sourced locally as much as possible. Thyme infused syrup decorates cocktails, such as the Old Thymer, and desserts, such as Ninnie’s Lemon Thyme Pound Cake. 

“It was important to me to make things that were really craveable, that were simple and that took a long time. We roast our own beef — it takes about two days. For the pork belly, it’s a multistep process — things that maybe the steps aren’t that complicated, but people don’t want to cook at home on a regular basis.”

Beans are soaked overnight for the popular falafel sandwich, and honey for the Hot Honey Chicken Sandwich is purchased from Appalachian Apiaries. Walters makes the sauces, such as the ginger soy, curry, and cilantro chutney, and hand-rolls the pasta. 

“We both grew up cooking with our families — we like to entertain people,” he said. 

Levine said they are happy to be back in Lewisburg, closer to friends and family, and to carry on the tradition of made-from-scratch restaurants in the area. 

“Lewisburg is so beautiful and has such a nice culture and a blending of the new and old,” she said. “We’re so happy to be part of that.”

Our Thyme Tavern is open for lunch and dinner every day from 11 a.m. to 9 p.m. Thursday through Monday and and closed on Tuesday and Wednesday. Sunday hours are brunch from 9 a.m. to 1 p.m. and 5 p.m. to 9 p.m. for dinner.
