Front Porch Conversations: Ramp recipes wanted
Anyone have any good/different ramp recipes? I made ramps with scrambled eggs and bacon. I have looked online, but I really want family based West Virginia ramp recipes.

April is the peak season for ramps, and we love them, too! No doubt many of us are getting a mess of them right now.
While this is by no means an accurate recipe, because nothing is ever measured, a tradition for one of us at RealWV is to make a fried potato, bacon and ramp dinner.
Step one: Fry bacon slices in a pan and save the grease.
Step two: Peel and dice four to five Russet potatoes and add them to the hot bacon grease in the pan. Cover and cook about 10 minutes (give or take) on medium/high. Don’t stir them too much. Let them get a little crispy. Take the cover off and cook about five more minutes.
Step three: Add ramps to the potatoes and cook about five more minutes until the ramps are wilted. Season with salt and pepper.
Step four: Drain on a paper towel.
We also make cornbread (either boxed Jiffy or Krusteaz honey cornbread mix) to go with the ramps and fried potatoes. The bacon is on the side.
