Mountain Scene: Taco traditions meet new horizons – Mi Rancho expands into White Sulphur Springs!

What began in 2015 has grown into a beloved Rupert staple, with Mi Rancho Mexican Restaurant and Grill earning a reputation for its warm hospitality, authentic flavors, and the family spirit behind every dish. Now, owners Amanda and Ruben Lopez are stepping into an exciting new chapter, bringing that same heart and tradition to White Sulphur Springs. Their new location is in the Food Lion shopping center on Pocahontas Trail (Rt. 92) and joins a quickly growing hub that includes Lotus Nail Salon, Mill Creek Bakery, and my agency, Christina Edwards, State Farm, making it a convenient and welcoming stop for locals and visitors alike. In this interview, Amanda and Rubin share the story of their beginnings, their expansion into WSS, and what guests can look forward to at the newest addition to the Mi Rancho family.

What inspired you to start your restaurant, and how did it all begin?

For years, my husband dreamed of opening a restaurant. Then one day, while traveling through Rupert, he spotted a building and thought, “That would be the perfect spot for a Mexican restaurant.”

We did some digging, found the owners, and shared our vision. At the time, they were ready to sell, but instead, they gave us a chance. We’ll forever be grateful that they believed in us.

Some people thought we were crazy, but Rupert was ready for something new. Ten years later, Mi Rancho has become part of the community. A place where families gather, friends celebrate, and memories are made.

Because of the love and support, we eventually outgrew that little building. To keep serving Rupert, we purchased a new location just down the road. And here we are, ten years later, still growing, still grateful, and still proud to call Rupert home

Can you share the story behind the restaurant’s name?

Thinking back, we’re not exactly sure why we chose Mi Rancho! In Spanish, it means “My Ranch.” At the time, we were inspired by a Western theme and some decor we had stumbled upon.

We didn’t start big, we pieced things together from thrift stores, finding items that felt unique and different. That simple, creative beginning shaped the personality of our restaurant.

Over time, Mi Rancho became more than just a name. It became a reflection of our desire to stand out, to be authentic, and to create a place that feels warm, welcoming, and truly part of the community.

Why did you choose to expand into WSS?

We’ve always believed in serving communities that feel like home and need a little something extra. White Sulphur stood out. We saw an opportunity to bring our food and culture to a growing town.

My fiancé got the enchiladas supreme which were absolutely delicious. I got the cheese steak burrito which was excellent. The servings are huge and you can’t beat the prices. How will this location be similar to, or different from, your original restaurant? 

Guests will find the same authentic flavors they’ve come to love at our first location. At the same time, Mi Rancho 2 will introduce new dishes. 

How do you see your restaurant fitting into the fabric of WSS?

We want Mi Rancho 2 to be more than a restaurant… it’s a gathering place. Whether its families celebrating milestones, friends catching up, or community events, we hope to become part of the everyday life of White Sulphur. 

What’s the one dish everyone must try when they visit?

That’s a tough one, because you really can’t go wrong with anything on our menu. Two of the most popular choices are the ACP (Arroz con Pollo), which is rice topped with grilled chicken smothered in our cheese dip. Fajita Fries, golden crispy fries topped with Fajita meat and veggies then smothered in cheese dip.

Not in the mood for Mexican? No problem! Our cheese steak sub and hamburgers are always crowd pleasers. And the best part? We’re adding new dishes, so keep an eye out for what’s next.

What are the hours of operation for the new location?

We’ll be open Monday through Wednesday 11am-9:30p, Thursdays, Friday & Saturday from 11am to 10pm and Sunday’s hours are unavailable right now as soon as we know we will post it.
